***Voted Best Japanese Chef Knife at the November 2021 Damasteel Chef Invitational***
Knife number 3 I crafted for the November Damasteel Chef Invitational is by far my favorite of the batch. I don't typically make such long blades so this one was a bit of a step outside my comfort zone, which is a step I'm very happy that I took because I couldn't be more excited with how this blade turned out.
I've been a big fan lately of protein slicing blades that resemble a traditional tanto tipped katana or wakizashi blade style, but I also wanted to add in an extra touch to really make this blade stand out from the rest. Thus, this blade features a double bevel flat grind geometry that is very thin behind the edge culminating in a compound harpoon-tanto tip grind giving it an almost scimitar-like look and an ergonomically faceted western styled handle that will hug your hand back. Handle is sculpted & polished "Golden Dragon" juma composite accented by a hand filed and highly polished brass bolster.
**All knives were hardened in a digital kiln for maximum accuracy, sub zero temperature treated, and double tempered to an approximate hardness of 62hrc.
